Hazel first recognized the power of coffee as a child in the Philippines. She would watch her grandmother roast beans—hand-picked by her family, dried on the sun-soaked patio. The intimate relationship between local farmers and coffee, the sounds of beans tossed in the wok, the smokey transformation from green to perfectly roasted, never left Hazel.
Years later, Hazel rekindled this personal relationship with coffee as she and Clare led the vanguard of Australian specialty coffee. Fearlessly modifying espresso machines, and pushing grinders to their limits, Clare and Hazel did it all.
The hard work and pursuit for perfection paved the way for Hazel to showcase her barista skills at the international level. This, was followed by various awards and recognition.
